Preparation:
Put 500g sushi rice in the bowl and wash it gently with cold water. Repeat washing several times until the water becomes more transparent. Put the washed rice in a strainer and drain off the water. Place the washed rice into the pot, add approximately 550ml of water. Don’t add salt! Keep the rice in water for 30 minutes before boiling. Put lid on the pot, put it on high heat until water starts to boil. Then stir the rice, put the lid on and keep boiling on low heat 15-20 min until rice has absorbed all the water. Turn off the heat, gently stir the bottom rice to the top, keep the rice under the lid 5-7 mi. Afterwards put the rice in a flat bowl, let it cool for 10 mi. Add 65 ml sushi rice vinegar to cooled rice, stir gently with a spatula.
