Preparation: Spice paste for Szechuan Kung Pao Stir Fry (serves 4)

Ingredients:

  • 1 packet Spice Paste for Szechuan Kung Pao Stir Fry
  • 350g – 450g chicken breast meat or fillet, cut into byte-sized pieces
  • 1 tsp corn starch or corn flour
  • 1-2 tbsp vegetable oil
  • 1 packet (60g) roasted cashew nuts, almonds or peanuts
  • 1tbsp sherry port or Chinese wine (optional)

Direction:

  1. Heat oil in non-stick pan or wok on medium-high heat. Coat chicken with corn starch or corn flour
  2. Add chicken and stir-fry for 1 minute. Add Spice Paste and fry for another 2 minutes.
  3. Add wine and stir-fry until meat is cooked. Mix in nuts. Serve hot with rice or noodles.
