Core Ingredients

The mix includes red chili, paprika, salt, brown cardamom, garlic, coriander, fenugreek leaves, green cardamom, cinnamon, clove, black pepper, cumin, bay leaf, onion, carom, and dried papaya powder (used as a natural meat tenderizer).

Official Cooking Instructions (For 1.5 kg / 3.3 lbs Meat)

Marinate: Dissolve 1 packet of Shan Karahi Mix in ½ cup of water. Mix with 2 tablespoons of crushed garlic, 1 tablespoon of ginger paste, and your choice of cubed meat. Marinate chicken for 15 minutes, or red meat for 1 to 2+ hours.

Sear: Heat 1 cup of oil in a pan and stir-fry the marinated meat on high heat for 5 to 6 minutes. Add 2 tablespoons of julienned ginger, cover, and cook on low heat until tender (approx. 10 minutes for chicken; 45 minutes for beef/lamb).

Prep Tomatoes: In a separate pan, heat ½ cup of oil and add 500g (6 to 7 medium) diced tomatoes. Cook on low heat for 5 to 6 minutes until soft, stirring periodically.

Combine & Finish:

Add the cooked tomatoes and 6 whole green chilies to the meat. Stir-fry on medium heat until the oil separates from the masala matrix. Skim excess oil if desired, then stir in ½ cup (85g) of butter and 2 to 3 tablespoons of fresh chopped coriander before serving hot with naan.
