Traditional Recipe & Preparation According to the instructions provided by Shan Foods, one 100g packet is optimized for 750g of minced/ground meat (ideally 600g lean meat mixed with 150g fat or suet for authentic juiciness).
1. Fresh Ingredients
Needed Onions: 250g (around 3 medium), very finely diced.
Crucial step: Squeeze them tightly in a cloth to remove excess liquid.Tomatoes: 1–2 medium, cut into thin round slices.
Aromatics:
2 tablespoons ginger paste,
3 tablespoons garlic paste, and
4–6 finely chopped green chilies.
Binding & Freshness:
1–2 whisked eggs and
3 tablespoons of chopped fresh coriander (cilantro).
Frying Medium:
Around 500ml of cooking oil for shallow frying.
2. Cooking StepsMarinate:
Thoroughly mix the minced meat, the entire packet of SHAN Chapli Kebab Mix, squeezed onions, green chilies, ginger/garlic pastes, fresh coriander, and whisked eggs together.
Knead the mixture well like dough, then cover and set aside to marinate for 30 minutes.
Shape: Wet your hands with water. Take a portion of the meat, press tightly to remove any air pockets, and flatten it into a wide, thin patty.
Press a thin, round slice of fresh tomato firmly onto one side of each patty.
Fry:
Heat oil in a flat pan. Carefully place the patties in and shallow fry on medium heat until both sides turn crisp and deep golden brown.

Authentic Texture: For a richer, more authentic Peshawari flavor, expert home cooks often mix 100g–200g of melted beef bone marrow and 1/2 cup of maize (corn) flour into the meat mixture.
