Spice Paste for Indonesian Nasi Goreng

Preparation:
Ingredients (serves 4):
- 1 packet Spice Paste for Indonesian Nasi goreng
- 2-3 tbsp vegetable oil
- 250g shelled prawns
- 2 eggs beaten
- 600g cooked rice
- 2 tomatoes, cut into 8 pieces
- chopped coriander, thinly sliced red chillies or egg sunny side up as garnish (optional).
Direction:
- Heat oil in non-stick wok or pan on medium-high heat. Add prawns and stir-fry for 2-3 minutes.
- Push the prawns to one side. Add egg and cook for 1 minute. Add rice and Spice Paste. Stir-fry for 3 minutes.
- Add tomatoes and stir-fry for 1 minute or until hot. Garnish.
