Preparation: Stir well 50g curry paste with 2 tbsp vegetable oil in a pan and warm gently. Add 400 ml of coconut milk and stir well. Add 250 g of any meat and 60 g eggplants, each in pieces, and cook them until done. Season to taste. Server with rice.
