Jianshui Noodles are also known as ‘Yellow Noodles’ or ‘Alkaline Noodles’. These Jianshui ‘Qingtian-style’ noodles are like fresh Sichuan noodles once cooked and differ to most Chinese dried wheat noodles due to the added secret ingredient ‘Jianshui’ or ‘Kansui’ which is an alkaline lye water.
