Add enough water to completely submerge the beef, then add the salt and <strong><span class=\"wprm-dynamic-quantity\">1<\/span> tablespoon <\/strong>of the curry paste. Bring to a simmer over high heat.<\/p>\n<div class=\"wprm-spacer\"><\/div>\n<p>Once simmering, reduce heat to medium low to maintain a simmer and cook for 20-25 mins or until\u00a0 tender; timing will vary if using different cuts of meat. Turn heat to medium low and stir constantly until very thick and the coconut oil separates from the paste; about 5-8 minutes (the oil may not separate depending on the coconut milk you\u2019re using; this is okay.)<\/div>\n<\/li>\n<li id=\"wprm-recipe-14993-step-0-3\" class=\"wprm-recipe-instruction\">\n<div class=\"wprm-recipe-instruction-text\">Add the remaining coconut milk, sugar, about <strong>half<\/strong> of the tamarind paste and about <strong>half<\/strong> of the fish sauce; stir to mix and bring to a boil.<\/div>\n<div class=\"wprm-recipe-instruction-ingredients wprm-recipe-instruction-ingredients-inline wprm-block-text-faded\"><span class=\"wprm-recipe-instruction-ingredient wprm-recipe-instruction-ingredient-14993-5\" data-separator=\", \">2 cups coconut milk, <\/span><span class=\"wprm-recipe-instruction-ingredient wprm-recipe-instruction-ingredient-14993-9\" data-separator=\", \">2 tablespoon palm sugar, <\/span><span class=\"wprm-recipe-instruction-ingredient wprm-recipe-instruction-ingredient-14993-10\" data-separator=\", \">1 &#8211; 2 tablespoon tamarind paste, <\/span><span class=\"wprm-recipe-instruction-ingredient wprm-recipe-instruction-ingredient-14993-8\" data-separator=\"\">1 &#8211; 2 tablespoon fish sauce<\/span><\/div>\n<\/li>\n<li id=\"wprm-recipe-14993-step-0-4\" class=\"wprm-recipe-instruction\">\n<div class=\"wprm-recipe-instruction-text\">Add the potatoes and onions and simmer for 5 minutes, uncovered, then remove from heat while you wait for the beef to be done; the potatoes should not be fully cooked yet at this point.<\/div>\n<div class=\"wprm-recipe-instruction-ingredients wprm-recipe-instruction-ingredients-inline wprm-block-text-faded\"><span class=\"wprm-recipe-instruction-ingredient wprm-recipe-instruction-ingredient-14993-6\" data-separator=\", \">10.5 oz waxy potatoes, <\/span><span class=\"wprm-recipe-instruction-ingredient wprm-recipe-instruction-ingredient-14993-7\" data-separator=\"\">\u00bd medium onion<\/span><\/div>\n<\/li>\n<li id=\"wprm-recipe-14993-step-0-5\" class=\"wprm-recipe-instruction\">\n<div class=\"wprm-recipe-instruction-text\">Once the beef is tender, use a slotted spoon to transfer only the beef into the curry. Then add <strong>only as much of the beef cooking liquid needed to keep everything barely submerged<\/strong>. (The remaining beef cooking liquid is super tasty, and you can save it to make a soup such as a beef noodle soup!)<\/div>\n<\/li>\n<li id=\"wprm-recipe-14993-step-0-6\" class=\"wprm-recipe-instruction\">\n<div class=\"wprm-recipe-instruction-text\">Turn the heat back on and simmer the curry, uncovered, for another 5-7 minutes or until the potatoes are fully cooked; timing may vary depending on the size. Taste the sauce and adjust seasoning with more fish sauce, tamarind or sugar as needed.<\/div>\n<\/li>\n<li id=\"wprm-recipe-14993-step-0-7\" class=\"wprm-recipe-instruction\">\n<div class=\"wprm-recipe-instruction-text\">Stir in the tomatoes then turn off the heat and allow the tomatoes to soften in the residual heat for a minute or so.
